Chorizo Mushrooms
We love tapas! Try making the Chorizo Mushrooms from Spoonsparrow.
Ingredients
- 300 g chorizo (paprika sausage)
- 16 large mushrooms
- 1 onion
- 2 Garlic cloves
- 2 tbsp chopped parsley
- 1 tbsp Olive Oil
- 1 tbsp red wine vinegar
- 1 tbsp whole-grain breadcrumbs
- 1 tbsp grated Manchego cheese
- Salt
- ground pepper
- 0.5 tsp mild paprika

Peel the chorizo and slice off 16 thin slices, finely dice the remaining portion.

Clean the mushrooms, remove stems and finely chop them. Peel and finely chop the onion and garlic.

Heat oil in a pan, sauté mushroom stems, onion, and garlic for about 5 minutes over medium heat. Add parsley and diced chorizo, cook briefly, deglaze with vinegar. Set aside and mix with breadcrumbs and cheese. Season with salt, pepper, and paprika, then fill the mushrooms.

Place the stuffed mushrooms in a baking dish and bake in a preheated oven at 220 °C (fan: 200 °C; gas: level 3–4) for about 10 minutes. Let cool. For serving, place one filled mushroom on a chorizo slice and secure with a wooden skewer.
