Chorizo mit Tomaten-Zwiebel-Ragout

- 4 Chorizo (approx. 180 g per person)
- 6 ripe beefsteak tomatoes
- 1 large white onion
- 2 fresh thyme sprigs
- olive oil
- Salt
- pepper (from grinder)

Wash the tomatoes, blanch them in boiling water, peel and cut into wedges. Peel and slice the onion. If necessary, remove casings from the chorizo and slice it. Heat 2 tbsp olive oil in a pan and brown the chorizo slices on all sides. Remove the slices and set aside.

Add the onion to the pan and sauté until translucent. Add the tomatoes, cover, and simmer over medium heat for about 5–8 minutes until tender (if the sauce reduces too much, add 2–3 tbsp water). Season with salt and pepper. Return the chorizo slices and thyme sprigs, cover, and let it simmer on low heat for another 5 minutes. Taste and serve warm.
