Chinese Egg Noodles with Duck Breast

Ingredients
- 600 g duck breast fillet (2 pieces)
- 250 g Chinese egg noodles
- 4 tbsp soy sauce
- 1 tbsp liquid honey
- 0.5 tsp sambal oelek
- 1 red bell pepper
- 1 bunch spring onions
- 2 tbsp lemon juice
- Salt
- 3 tbsp oil
- 250 ml poultry broth
- 2 tbsp fresh coriander (finely chopped)

Instructions

Cook noodles according to package instructions, remove, rinse with cold water, then drain.

Whisk honey, soy sauce and sambal oelek together.

Slice duck breast fillet into thin strips, place in the marinade and let sit for 30 minutes.

Wash, trim and halve the bell pepper, remove seeds and white membranes, then cut into very fine slivers.

Trim spring onions, wash, slice green parts into rings, and cut white and light green parts into fine julienne.

Remove meat from the marinade, drain, reserve the marinade.

In a hot wok, sear duck strips briefly with about 1 tbsp oil until browned all around, then remove. Add bell pepper slivers and spring onions to the wok, stir-fry in remaining oil until slightly firm, season with salt and lemon juice, pour in broth and remaining marinade, bring to a boil, add duck and noodles, mix well, simmer briefly, and serve sprinkled with coriander.
