Chopped Herring on Potatoes with Cream Drizzle

Ingredients

  • 4 firm potatoes
  • 1 bundle radishes (ca. 100 g)
  • 10 g chives
  • 4 herring fillets (each ca. 80 g)
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 80 g caviar (optional)
  • 4 tbsp crème fraîche
  • chives (for garnish)
  • radish leaf (for garnish)

Instructions

    Wash the potatoes and steam them for 20-25 minutes until not too soft.

    While the potatoes cook, wash, trim and finely dice the radishes. Wash the chives, shake dry and cut into fine ribbons. Rinse the herring fillets, pat dry and remove any remaining bones if present. Dice very finely. Mix the radish cubes with the herring cubes, chives and lemon juice; season with salt and pepper. Taste and refrigerate covered for 30 minutes to meld flavors.

    Peel the potatoes and cut them into about 2 cm thick slices.

    Spread caviar on the potato slices, top with seasoned chopped herring, drizzle with crème fraîche, add a few chives and radish leaves as garnish, and serve immediately.
