Caviar Bites of Puff Pastry

Ingredients

  • 300 g puff pastry (frozen)
  • flour (for dusting)
  • butter (for the molds)
  • 1 egg yolk
  • 1 Shallot
  • 1 ripe Mango
  • 1 ripe Avocado
  • 0.5 untreated lemon
  • Salt
  • Pepper (freshly ground)
  • sugar
  • 5 tbsp black caviar

Instructions

    Preheat the oven to 200°C with top and bottom heat.

    Thaw the puff pastry, lay it on a floured surface and roll thinly. Cut out circles about 7 cm in diameter and line small buttered muffin tins with them, shaping a 1 cm high rim. Brush the dough with egg yolk and bake in the preheated oven for 15-20 minutes until golden brown.

    Meanwhile, finely chop the shallot. Peel the mango, cut the flesh away from the pit into small cubes. Halve the avocado, twist out the seed, press the flesh out of the skin and cube it as well. Mix the mango, avocado, chopped shallot and lemon juice, seasoning with salt, pepper and a pinch of sugar.

    Remove the puff pastry cups from the oven, let them cool, then release them from the tins and allow to cool further. Spread the mango‑avocado salsa on top and garnish with caviar before serving.
