Ingredients
- 400 g potatoes (starchy, boiling)
- 2 carrots
- 1 onion
- 2 tbsp flour
- 1 egg (size M)
- Salt
- freshly ground pepper
- 1 bunch parsley
- 6 tbsp oil (for frying)
- 150 g crème fraîche
- 25 g Russian caviar (alternatively keta or trout caviar)

Peel and wash potatoes, peel and trim carrots. Grate potatoes and carrots finely. Peel onion and dice finely. Mix grated potato, carrot, onion, flour, and egg together. Season with salt and pepper. Rinse parsley, dry, and chop finely. Fold into the potato mixture.

Heat oil in a non-stick pan in portions. Drop spoonfuls of the potato mixture, flatten them, and fry until golden brown on both sides. Serve patties with dollops of crème fraîche and caviar.
