Chocolate Truffles

Ingredients
- 250 g dark chocolate couverture
- 250 g milk chocolate couverture
- 200 ml whipping cream
- 100 g softened butter
- 40 ml rum
- 150 g milk chocolate couverture
- 200 g white chocolate couverture
- coconut flakes
- crunchy praline
- sugar sprinkles (and flowers)
Instructions

Chop both couvertures. Bring the cream to a boil, remove from heat, stir in the chopped chocolate and let melt. Whip the butter until fluffy and fold into the rum and chocolate mixture. Transfer to a bowl and cover for at least 2 hours in the refrigerator.

Then, using a teaspoon, cut about 40 portions and shape into balls. Refrigerate again.

Chop the couverture for coating and melt about two‑thirds over a double boiler. Remove from heat, stir in the remaining couverture and let melt. Dip the truffles with a pralin spoon into each chocolate and place on parchment paper. Sprinkle or roll in coconut, crunchy praline or sugar sprinkles as desired and allow to set.
