Chocolate Mousse with Raspberries

Ingredients
- 150 g dark chocolate
- 1 shot strong espresso
- 3 eggs
- 30 g vanilla sugar
- 125 g chilled whipping cream
- 2 tbsp sugar
- 300 g raspberries
- Shaved white and dark chocolate
Instructions

Melt chopped chocolate with espresso in a double boiler, then remove from heat.

Separate the eggs. Beat yolks with vanilla sugar over the hot water bath until thick and frothy, until sugar dissolves.

Whip chilled cream to stiff peaks.

Beat egg whites with sugar into stiff meringue.

Add yolk mixture to chocolate and fold in with a whisk. Spoon whipped cream onto chocolate mixture and quickly fold in before it sets.

Fold in meringue gently.

Sift raspberries, distribute into dessert cups (reserve some for garnish) and pour mousse over them, then chill until serving.

Garnish with raspberries and sprinkle shaved white and dark chocolate before serving.
