Ingredients

  • 2 egg yolks
  • 2 Eggs
  • 250 g dark chocolate couverture
  • 100 g milk chocolate couverture
  • 50 g sugar
  • 40 ml rum
  • 0.5 l whipping cream
  • 100 g fresh raspberries
  • cocoa powder

Instructions

    Beat egg yolks, eggs, sugar and rum over a hot water bath until creamy. Stir in melted chocolate and chill. Then fold in whipped cream. Place the ring on a cake pan (if it does not seal tightly, line with plastic wrap) and pour in mousse. Chill for at least 3 hours.

    Rinse raspberries and skewer them on wooden sticks.

    Remove the ring from the cake (best done by running a knife along the edge) and dust with cocoa powder. Place raspberry skewers on the cake and serve.
