Strawberry Mascarpone Gratin

Ingredients
- 2 egg whites
- Salt
- 1 Vanilla bean
- 1 Organic lemon
- 4 egg yolks
- 2 tbsp Raw cane sugar
- 2 tbsp ground hazelnuts
- 125 g mascarpone
- 125 g low-fat quark
- 500 g fresh strawberries
- 1 tbsp butter (for greasing)

Beat the egg whites with a pinch of salt until stiff peaks form. Split the vanilla bean lengthwise and scrape out the seeds with a knife. Rinse the lemon hot, pat dry, grate the zest finely, then squeeze out the juice.

Whisk the egg yolks with vanilla seeds, lemon zest and juice, sugar, hazelnuts, mascarpone and quark until smooth; gently fold in the beaten egg whites.

Wash, hull, and pat the strawberries dry. Grease the gratin dishes. Spoon the quark mixture into the greased dish, arrange strawberries on top, and bake in a preheated oven at 180 °C (160 °C fan) for about 30 minutes.

Remove the strawberry mascarpone gratin from the oven and serve immediately.
