Ingredients

  • 500 g white couverture chocolate
  • 8 sheets of white gelatin
  • 2 Eggs
  • 2 egg yolks
  • 2 tbsp white rum
  • 500 ml whipping cream
  • cocoa powder (for dusting)

Instructions

    Cut the couverture into small pieces and melt slowly over a bain-marie. Soak gelatin in cold water. Beat eggs and yolks in the hot water bath, squeeze out excess water from gelatin, add to the mixture and dissolve. Add rum and chill the egg cream in a cold water bath while stirring.

    Whip the cream stiffly and fold it into the egg cream. Gently fold in the melted couverture. Spoon the mousse into small bowls, smooth the tops, and refrigerate overnight. Cover half of them, dust with chocolate, and serve immediately.
