Chocolate Lebkuchen

Ingredients
- 300 g honey
- 50 g sugar
- 200 g Flour
- 3 g salt
- 120 g rye flour
- 3 g potassium carbonate
- 1 egg yolk
- 20 g Lebkuchen spice mix
- 240 g marzipan base
- 180 g orange marmalade
- 200 g dark couverture chocolate
- 50 g light couverture chocolate
- 25 walnut halves
- milk (for brushing)

Dissolve honey and sugar over gentle heat. After two hours, add flour and salt to the cooled mixture, stir, and combine with remaining ingredients into a dough. Let the dough rest for 1 hour, then roll thinly. Cut out hearts and stars (7 cm diameter).

For the filling, blend marzipan and marmalade until smooth, optionally adding a little hot water. Spread the mixture on half of the Lebkuchen, leave a border, place the second half on top, press firmly. Brush the Lebkuchen thinly with milk and prick with a fork. Bake at 190°C for about 8 minutes, then remove and cool.

Melt the couverture chocolates separately in a double boiler. Dip the Lebkuchen into the dark chocolate and let drain on a rack. Shape parchment paper into a bag, fill with light chocolate, trim a tiny tip, paint thin strips onto the Lebkuchen, decorate with walnut halves, and allow the chocolate to set.
