Chocolate Croissants

Ingredients
- 100 g dark chocolate (60-70% cocoa content)
- 200 g butter
- 100 g sugar
- 100 g peeled ground almonds
- 300 g flour

Coarsely chop the chocolate and melt it in a bowl over a warm water bath. Let cool. Whisk the butter with sugar until fluffy, then fold in the melted chocolate. Add the almonds and flour, knead quickly. Shape the dough into 3 cm thick rolls, wrap in foil, and chill for 3 hours. Preheat oven to 175 °C. Slice the dough into 1 cm thick pieces, roll into croissants. Place on a parchment-lined tray and bake at 175 °C (gas: level 2) for about 10 minutes. Let cool.

For decoration: Chop 200 g dark couverture chocolate, melt it over a warm water bath, then drizzle over the croissants to decorate. Or chop 100 g white couverture chocolate, melt it, draw graffiti-like lines over the croissants and sprinkle with colorful sugar sprinkles. Or dust the croissants heavily with powdered sugar.
