Chocolate Cake with Marzipan Stars

Ingredients

  • 240 g dark chocolate
  • 220 g soft butter
  • 175 g powdered sugar
  • 8 eggs
  • 120 g sugar
  • 175 g flour
  • 60 g finely ground almonds
  • 240 g apricot jam
  • 250 g dark chocolate
  • 220 g sugar
  • 250 g marzipan dough
  • 3 tbsp powdered sugar
  • cling film
  • butter
  • ground almonds (for the pan)

Instructions

    Grease the pan and line with almonds, then refrigerate.

    Melt chopped chocolate in a double boiler for the batter. Cream butter with powdered sugar. Separate eggs. Gradually fold yolks and melted chocolate into the butter mixture.

    Beat egg whites with sugar until stiff peaks form, then gently fold into the chocolate mixture. Combine flour with almonds and fold in as well. Pour batter into pan and bake at 180°C for about 1 hour. Remove, cool, and unmold.

    Warm apricot jam for filling and strain through a sieve to smooth it out.

    Break chocolate into pieces for the glaze. In a saucepan combine sugar, 250 ml water, and chocolate; simmer for 5 minutes over medium heat while stirring constantly. Let it cool slightly with continuous stirring.

    Slice the cake horizontally. Spread half of the apricot jam on one layer, reassemble, and spread remaining jam on top. Cover the entire surface with the chocolate glaze.

    Knead marzipan dough with powdered sugar, roll out to 3 mm thickness between cling film. Cut stars of various sizes and place them on the wet glaze. Optionally decorate with festive pearls.
