Chocolate Buttercream Pralines with Pecans

Ingredients
- 125 g dark chocolate couverture
- 100 g milk chocolate couverture
- 75 ml whipping cream
- 125 g butter
- 1 vanilla bean (pulp)
- 75 g pecans (chopped)
- 30 pecans
- 30 praline capsules

Chop the dark and milk chocolate and melt over a hot water bath while stirring. Bring the cream to a boil and whisk it into the melted chocolate until smooth. Cool, but do not let it set.

Beat the butter in a stand mixer with a paddle attachment until very creamy and pale. Fold in the vanilla pulp and the liquid, cooled chocolate mixture. Stir in the chopped nuts and refrigerate for about 30-40 minutes until the mixture is almost firm yet still pourable. Whisk briefly again with a hand whisk. Pipe the mixture into a piping bag fitted with a smooth tip and fill 30 praline capsules. Place one pecan on each, chill for at least 2 hours until set.
