Ingredients

  • 4 egg whites
  • 2 tsp lemon juice
  • 250 g sugar
  • 125 g ground almonds
  • 30 g cocoa powder
  • powdered sugar (for rolling)

    Preheat the oven to 140°C fan. Beat the egg whites with lemon juice until very stiff peaks form. Gradually add the sugar, continuing to beat until a firm, glossy mixture forms. Gently fold in the almonds and cocoa. Fill a piping bag fitted with a large round tip with the batter. Pipe small half‑balls about 2 cm in diameter onto a baking sheet lined with parchment paper. Bake the macarons in the preheated oven for about 25 minutes, leaving the oven door slightly ajar.

    Remove the finished macarons from the oven, let them cool, roll them in powdered sugar and serve.
