Peach Mousse

Ingredients
- 4 ripe peaches
- 100 g sugar
- 6 sheets gelatin
- 200 g whipping cream
- 300 g yogurt
- 4 stems mint

Briefly blanch the peaches in hot water, peel them, halve the fruit and remove the pits. Slice one peach into wedges for garnish and set aside. Chop the remaining peaches and puree them in a blender. Mix in the sugar and heat while stirring constantly.

Soak the gelatin in cold water, squeeze out excess liquid and add it to the peach purée. Once the gelatin has dissolved, remove the mixture from heat and let it cool slightly while stirring.

Beat the cream until stiff peaks form. Stir the yogurt into the peach mixture and finally fold in the whipped cream gently. Spoon the batter into molds or cups and refrigerate for 2–3 hours to set.

Just before serving, briefly dip the molds up to the rim in hot water, then flip onto plates. Rinse the mint with cold water, shake dry and pluck the leaves. Serve the yogurt‑cream topped with peach wedges and mint sprigs.
