Ingredients

  • 150 g soft butter
  • 150 g couverture chocolate
  • 150 g sugar
  • 1 packet vanilla sugar
  • a pinch of salt
  • 4 eggs
  • 300 g flour
  • 2 tsp Baking powder
  • 150 g ground hazelnuts
  • 100 g apricot jam
  • 150 g chocolate glaze (ready-made)
  • chocolate lollipops
  • colorful sprinkles

Instructions

    Melt the chopped couverture in a double boiler, remove from heat and let it cool slightly. Then whisk in butter, sugar, vanilla sugar and salt until creamy. Gradually fold in the eggs. Add flour with baking powder and hazelnuts on top and mix; add a little water if needed to achieve a thick batter.

    Pour the batter into a greased bear-shaped pan, smooth the surface, and bake in a preheated oven at 200°C for about 40 minutes. Remove, let cool in the pan for about 15 minutes, then unmold, flip onto a plate and allow to cool completely.

    Warm the apricot jam, strain it through a sieve and spread it over the cake.

    Melt the chocolate glaze in a double boiler and coat the cake with it. Immediately place chocolate lollipops as eyes and buttons, and decorate with colorful sprinkles as desired.
