Ingredients
- 4 small apples
- 2 sheets of white gelatin
- 2 tea bags of green tea (e.g., Sencha Dawn)
- 250 ml Water
- 50 g milk rice
- 1 vanilla pod
- 2 tbsp honey
- 20 g pistachios
- 200 ml whipping cream
- to taste lemon balm (for garnish)

Rinse the apples and place them in a baking dish. Bake in a preheated oven at 200°C for 15-20 minutes.

Soak gelatin in cold water for 5 minutes. Brew Sencha Dawn with boiling water, then remove the tea bags. Add the rice. Split the vanilla pod and scrape out the seeds. Add both to the rice and simmer gently for 10 minutes, then let it rest for 25 minutes. Squeeze out excess water from the gelatin and stir into the hot rice. Sweeten with honey and allow to cool.

Lightly roast the pistachios. Whip the cream until stiff peaks form. Remove the vanilla pod from the rice mixture and fold in the whipped cream. Arrange the milk rice together with the baked apples on a plate, sprinkle with pistachios, and garnish with lemon balm if desired.
