Ingredients

  • 250 g flour
  • 2 Eggs
  • 375 ml milk
  • 1 pinch salt
  • butter for frying
  • 150 g dark chocolate
  • 50 ml heavy cream
  • 2 Bananas
  • 1 tsp lemon juice

Instructions

    Add the flour to a bowl and whisk in some milk until smooth. Then stir in the eggs, salt, and remaining milk until a silky batter forms. Let the batter rest for at least 20 minutes, then stir again.

    Heat a little butter in a pan. Pour a ladleful of batter into the hot pan, tilt the pan to spread it thinly. Cook on medium heat until bubbles form, flip, cook the other side, and transfer the crepe to a plate. Keep warm at 100 °C in a preheated oven. Repeat with the remaining batter to make about 20 thin crepes.

    Melt the chocolate together with the cream over gentle steam (do not boil). Peel the bananas, slice them, and drizzle with lemon juice.
