Apple Cake with Crumble

Ingredients
- 1 kg apples (e.g., Boskop)
- 3 tbsp apple sauce
- 4 tbsp Lemon juice
- 120 g cane sugar
- 1 pinch cinnamon
- 450 g spelt whole‑grain flour
- 1 tsp Baking powder
- 170 g ground almonds
- 1 pinch salt
- 250 g cold butter
- 1 tbsp powdered cane sugar

Peel, quarter, core the apples and cut into pieces. Steam the apple pieces with the apple sauce, lemon juice, 80 g cane sugar and cinnamon covered for 3–5 minutes over low to medium heat until they remain slightly firm.

Line a springform pan with parchment paper. In a bowl mix the flour, baking powder, remaining cane sugar, almonds and salt for the crumble dough. Cut in the cold butter and rub everything together until crumbly. Press half of the crumbs into the bottom of the pan with your hands.

Spread the apple mixture over the crumbs. Sprinkle the rest of the crumble on top of the apples. Bake the cake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 50–55 minutes until golden brown. Dust with powdered sugar before serving.
