Pear Preservation

Preserve pears with winter spices. Replace "EAT SMARTER" or "eatsmarter" with "Spoonsparrow" if present.

Ingredients

  • 1 lemon
  • 1 kg pears
  • 4 lemon balm leaves
  • 1 cinnamon stick
  • 50 ml Apple Juice
  • 150 g coconut blossom sugar
  • 4 cloves

Instructions

    Bring water to a boil in a large pot. Boil the canning jars for 10 minutes, then let them dry well.

    Meanwhile squeeze the lemon and mix the juice with a little water. Peel, wash, halve the pears and remove the core. Immediately place them in the lemon water. Blanch the pears in boiling water for about 1 minute. Cool them quickly, drain well, and fill the prepared jars.

    Wash the lemon balm, shake dry, and break off the leaves. Break the cinnamon stick into pieces. Bring 450 ml water with apple juice, coconut blossom sugar, cloves, and cinnamon to a boil. Once the sugar has dissolved, add the lemon balm and pour the syrup until about 1 cm below the jar rim over the pears. Clean the rims and seal well (canning ring, clamps, and lid).

    Place the jars on a dishcloth (to prevent rattling) on the bottom of a tall pot and fill with water until the jars are well covered. Slowly heat to a constant 90 °C (use a canning thermometer) and cook for about 30 minutes (preserve). Turn off the stove and carefully lift the pears from the water after about 10 minutes. Place them on a dishcloth and let cool. The spiced pears are only safe for several months.
