Mango Tart

Ingredients
- 4 ripe mangos
- 150 g jelly (or lemon jelly)
- 1 tsp lime zest
- a pinch of salt
- 1 tbsp apple sauce
- 150 g vegan butter
- flour (for the work surface)
- vegan butter (for the pan)
- legumes (to sprinkle)
Instructions

Mix flour with sugar, vanilla sugar and salt for the dough; pile on a work surface, press a well in the middle, add the apple sauce and spread the butter around the well. Quickly knead into a smooth dough with your hands, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat the oven to 180°C (356°F) fan‑forced or conventional heat.

Roll out the dough on a floured surface slightly larger than the pan, line a buttered tart tin. Cover with parchment paper, sprinkle legumes on top and bake blind for about 25 minutes in the preheated oven.

Remove the base from the oven, take off the legumes and parchment paper and let it cool.

Meanwhile peel the mangos, cut the flesh away from the stone into thin strips. Warm the lime jelly in a saucepan until melted. Place the shortcrust base on a plate, arrange mango strips over it, spread the jelly on top, sprinkle with zest and allow to set.
