Vegetable Rice Stir-Fry with Seafood

Ingredients

  • 300 g seafood mix
  • 600 g jasmine rice (cooked and cooled)
  • 2 cloves garlic
  • 1 bunch spring onions
  • 1 cucumber
  • 3 tomatoes
  • 4 stalks coriander
  • 2 tbsp oil
  • fish sauce
  • Salt

Instructions

    Thaw the seafood, rinse and pat dry.

  2. 2.

    Peel and finely chop the garlic; clean the spring onions, wash them, cut into ~3 cm pieces and halve lengthwise.

    Wash, peel, halve lengthwise and deseed the cucumber. Then slice it.

    Wash the tomatoes, remove the stem ends and cut into wedges.

  5. 5.

    Rinse the coriander, shake dry and pluck the leaves.

  6. 6.

    Heat oil in a pan and sauté the garlic; add the seafood and cook for about 2 more minutes. Then stir in rice, tomatoes, cucumbers and spring onions. Cook for another 4‑5 minutes while stirring, seasoning with salt and fish sauce.

    Serve garnished with coriander. Offer chili sauce and soy sauce on the side as desired.
