Ingredients

  • 3 tbsp mild apple cider vinegar
  • 4 tbsp cold-pressed olive oil
  • 0.5 tsp medium-hot mustard
  • 4 tbsp freshly squeezed orange juice
  • Salt
  • ground pepper
  • 1 chicory
  • 1 small radicchio
  • 1 small endive salad
  • 100 g lamb's lettuce
  • 2 tbsp pine nuts
  • 2 tbsp chives
  • 1 tbsp cold-pressed olive oil
  • 1 tbsp Lemon Juice
  • 6 small sage leaves
  • 200 g mushrooms
  • Salt
  • ground pepper

Instructions

    For the salad whisk vinegar with oil, mustard, orange juice, salt and pepper. Clean, wash and dry the salads.

    For the mushrooms mix oil with lemon juice and sage. Clean mushrooms, wipe them, slice into ½ cm thick pieces and brush with some dressing. Heat a grill or grill pan. Grill mushrooms on each side for 1 min. Salt and pepper.

    Cut chicory, radicchio and endive salad into bite‑sized pieces. Leave lamb's lettuce as a small bunch. Mix the salads with the dressing and spread on plates. Arrange the mushrooms on top. Sprinkle with pine nuts and chives and serve.
