Ingredients

  • 200 g oats
  • 1 sour apple
  • 4 tbsp Lemon juice
  • 1 orange
  • 2 ripe mangoes
  • 1 red chili pepper
  • 2 tbsp Orange juice
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 1 tbsp chopped parsley
  • 1 Banana
  • 2 chicory stalks
  • 1 untreated lemon

Instructions

    Bring the oats to a boil with 0.5 l water and simmer covered on low heat for 30 minutes. Wash the apple, quarter it, remove the core, slice into wedges and drizzle with 2 tbsp lemon juice. Peel the orange thickly so that the white pith is removed, segment it and cut into wedges.

    Wash the mangoes, cut the flesh as close to the pit as possible and score crosswise. Wash the chili pepper, halve it and remove the seeds. Mix the remaining lemon juice with the orange juice, salt, pepper, 1 tbsp oil and parsley. Brush a grill pan with the remaining oil and grill the apple and orange wedges, peppers and mango slices.

    Grill each side for 1 minute, grill the mango slices flesh-side down and the chili peppers cut-side down for about 2 minutes. Drain the oats. Peel the banana, slice it and add to the oats with the sauce. Split the chicory into leaves, wash, dry and lay a bowl with them.

    Chop the grilled fruits (except the mangoes) and mix with the salad. Slice the peppers into fine strips and fold in. Turn the grilled mango slices so that the flesh sticks out like spikes. Quarter the lemon and serve with the mangoes on the salad.
