Chicory Orange Salad with Walnuts

Ingredients

  • 500 g chicory (4 heads)
  • 2 oranges
  • 1 tbsp honey
  • 3 tbsp white balsamic vinegar
  • 4 tbsp Walnut oil
  • salt to taste
  • 40 g walnut kernels
  • fresh parsley

Instructions

    Wash and trim the chicory, cut it lengthwise in half and remove the stem with a wedge shape. Chop the leaves into small pieces. Peel the oranges and cut out the segments, catching the juice and squeezing out the remaining flesh.

    Whisk orange juice with honey, vinegar and oil. Season with salt. Roughly chop the walnuts. Wash parsley and shake dry.
