Chickpea Coriander Patties

Ingredients

  • 1 old-fashioned roll
  • 1 onion
  • 1 Garlic clove
  • 500 g canned chickpeas
  • 2 tbsp freshly chopped coriander leaves
  • 0.5 tsp ground coriander
  • 0.5 tsp ground cumin
  • 0.25 tsp baking powder
  • 1 egg
  • breadcrumbs (as needed)
  • Salt
  • Pepper (freshly ground)
  • vegetable oil (for frying)
  • arugula (for garnish)

Instructions

    Soak the roll in water, then squeeze out excess liquid. Peel and finely chop the onion and garlic. Drain and rinse the chickpeas, then pat them dry. Roughly blend the soaked roll, garlic, onion, and chickpeas in a blender.

    Add the chopped coriander leaves, ground coriander, cumin, baking powder, and egg to the mixture. If the batter is too soft, fold in breadcrumbs. Season with salt and pepper.

    Shape small patties from the batter and fry them in hot oil for 2‑3 minutes on each side until golden brown. Drain on paper towels and serve plated with arugula garnish.
