Chicken with Wine Sauce and Grapes

- 1 chicken (approx 1.2 kg)
- Salt
- black pepper (freshly ground)
- 500 g grapes
- wine leaf (if available)
- 400 ml instant chicken broth
- 200 ml white wine
- 200 g heavy cream

Wash the chicken, pat dry and rub inside and out with salt and pepper. Wash, clean, deseed, optionally halve the grapes and stuff them into the chicken cavity. Pinch the cavity closed with toothpicks and line it with wine leaves.

Peel onions and cut lengthwise into wedges.

Place the chicken breast-side down in a roasting pan, add a bay leaf and onions, and roast in a preheated oven at 200 °C (second rack from bottom) for about 75 minutes.

During roasting gradually pour in broth, letting it evaporate between additions; after 50 minutes flip the chicken. Remove finished chicken from the oven, arrange on a platter with the stuffing and keep warm. Resolve the pan juices with wine, strain into a wide pot, add cream and reduce quickly to about half volume, season with salt and pepper. Serve sauce separately alongside the chicken.
