Crispy Cornflakes Chicken with Fried Potatoes

- 800 g potatoes
- 3 tbsp olive oil (cold pressed)
- 1 rosemary sprig
- Salt
- Pepper (freshly ground)
- 4 chicken breast fillets (ca. 600 g)
- 4 tbsp flour
- 2 Eggs
- 100 g cornflakes
- fat (for frying)

Preheat the oven to 180°C fan.

Wash, dry and halve the potatoes; quarter if large. Toss with olive oil in a baking tray, bake for 30-35 minutes until golden brown, stirring occasionally. Roughly 5 minutes before the end, add finely torn rosemary sprigs and season with salt and pepper.

Slice each breast fillet horizontally to create 8 cutlets. Mix flour with salt and pepper on one plate; whisk eggs in another; crush cornflakes slightly by hand on a third plate. Coat each cutlet first in flour, then in egg, and finally in cornflakes. Fry portions in hot fat for about 5 minutes until golden brown. Drain on kitchen paper and serve atop the fried potatoes with a fresh salad.
