Chicken Strips with Cucumber and Mushrooms

Ingredients
- 100 g cucumber
- salt, pepper
- 400 g chicken breast fillet
- 200 g mushrooms
- 1 onion
- 3 tbsp oil
- 250 ml poultry stock
- 100 g crème fraîche
- 1 tsp starch
- 1 bunch dill

Rinse the cucumber and slice it. Sprinkle with a little salt and set aside.

Cut the chicken breast into strips. Clean, trim, and halve or quarter the mushrooms as needed. Peel and dice the onion. Heat oil in a large pan. Brown the chicken strips. Add the onion and mushrooms and cook together. Season with salt and pepper.

Pour in the poultry stock and cover; simmer for 10 minutes. Whisk the crème fraîche with starch and stir into the stock. Bring to a gentle boil while stirring.

Rinse the dill, shake dry, and finely chop. Pat the cucumber dry and add it with the dill to the chicken mixture. Warm briefly and adjust seasoning with salt and pepper.
