- 400 g chicken breast fillet
- 1 Carrot
- 1 EL plant oil
- 1 TL curry powder
- 100 g hummus
- Salt
- Pepper (freshly ground)
- 1 splash Lemon juice
- 4 salad leaves (e.g., Lollo bionda)
- 4 baguette rolls

Rinse the chicken, pat dry and cut into cubes. Peel and grate the carrot. Together in a hot pan with oil cook for about 3 minutes while stirring. Stir in curry powder and cook briefly more. Remove from heat, stir in hummus and season with salt, pepper and lemon juice. Let cool.

Wash the salad leaves, rinse and shake dry. Slice the rolls lengthwise, fill with salad and chicken, and pack as desired for school.
