Ingredients

  • 1 bundle spring onions
  • 500 g chicken breast fillet
  • 30 g clarified butter
  • 1 Garlic clove
  • 1 kg fresh spinach leaves
  • 5 tbsp olive oil
  • Salt
  • ground pepper
  • juice of half a lemon
  • grated Parmesan cheese

Instructions

    Clean, wash and slice the spring onions into thin rings.

    Cut the chicken breast into strips. Heat clarified butter in a pan and brown the chicken strips in small batches until golden brown; add the spring onions to sauté with them.

    Peel the garlic and press it onto the meat.

    Wash the spinach leaves thoroughly. Heat olive oil in a pan and steam the spinach for about 10 minutes.

    Season the spinach with salt, pepper, and lemon juice. Add the chicken strips and spring onions to the spinach.

    Serve with grated parmesan cheese on top.
