Chicken Shrimp Stew

Ingredients

  • 1 chicken (approx. 1.2 kg)
  • 2 large onions
  • 2 Garlic cloves
  • 2 tbsp butter
  • Salt
  • Pepper
  • 3 fresh bay leaves
  • 150 ml dry white wine
  • 4 tomatoes
  • 250 ml poultry stock
  • 4 fresh shrimp
  • 1 tbsp finely chopped parsley

    Rinse the chicken, pat it dry and cut into 8 pieces. Peel and finely dice the onions and garlic. In a pot or Dutch oven, sauté them in hot butter until translucent. Add the chicken pieces and brown them golden. Season with salt and pepper, add bay leaves, and deglaze with wine. Boil the tomatoes, cool, peel, quarter, deseed, and dice finely. Add to the chicken and pour in a little stock. Cover and simmer gently for about 30 minutes.

    Wash and pat dry the shrimp. In the last 5-10 minutes, stir in the shrimp and parsley. Season with salt and pepper and serve.
