Ground Beef Rice Casserole with Marinated Peppers

Ingredients
- Paprika (2 red, green, and yellow each)
- 2 Garlic cloves
- 1 EL lemon juice
- 2 EL olive oil
- Salt
- Pepper
- 250 g long grain rice
- 400 g ground beef
- 2 EL oil
- 2 sprigs Rosemary
- 3 sprigs thyme
- 3 shallots
- 2 meat tomatoes

Wash the peppers, halve them and remove seeds. Pat dry and place skin side up in a baking dish. Bake at 200°C for about 20 minutes. Remove from oven and let cool. Peel and finely chop garlic. Mix with pepper juice, lemon juice, oil, salt, and pepper; marinate for at least 5 hours.

Cook the rice and drain. Heat oil in a pan and brown the ground beef until crumbly. Peel and quarter shallots, add to beef, and cook about 10 minutes. Wash tomatoes, dry, and slice. Combine rice and beef, season with salt and pepper. Tear rosemary leaves and thyme sprigs from stems, mix in. Transfer everything to a baking dish, top with tomato slices, cover with marinated peppers, and bake at 180°C for 20-30 minutes until golden brown.
