Meatballs with Vegetables and Noodles

- 500 g mixed ground beef
- 1 loaf of bread (from yesterday)
- 1 egg
- 1 chili pepper
- 100 g mango flesh
- 1 tsp curry powder
- 1 tsp cumin
- 1 tbsp paprika
- 5 tbsp vegetable oil
- 250 g Asian egg noodles
- 0.5 bunch carrots
- 0.5 bunch spring onions
- 2 tbsp sesame oil
- 150 g soy sprouts
- Salt
- Pepper

Soak the bread in lukewarm water, squeeze out excess liquid, crumble and mix with meat, egg, and spices. Halve the chili pepper, remove seeds, wash, finely chop. Dice the mango flesh finely, combine both mixtures, season with salt and pepper.

Shape into balls and fry in vegetable oil, turning, for 8 minutes. Cook noodles according to package instructions. Peel and wash carrots, cut into sticks. Trim spring onions, wash, cut ends off, slice green parts into rings.

Rinse soy sprouts under hot water, drain well, add to remaining vegetables. Sauté vegetables in a large pan with sesame oil, turning, for 8 minutes. Serve noodles with vegetables and meatballs in bowls.
