Chicken Sandwiches

Ingredients
- 2 chicken breast fillets (about 140 g)
- 400 ml Poultry broth
- 1 Lettuce head
- 1 cucumber
- 3 sprigs parsley
- 100 g mayonnaise
- 50 g yogurt
- 1 tsp curry powder
- Salt
- Lemon juice
- Pepper
- 4 slices Tramezzino bread

Wash the chicken breast fillets and pat them dry with paper towels. Bring the poultry broth to a boil in a pot. Add the meat, bring it back to a boil, then cover and simmer over low heat for about 10 minutes until cooked through. Remove from heat and let cool in the broth.

Meanwhile, rinse the lettuce, shake dry, clean, and cut into strips. Peel the cucumber, halve lengthwise, deseed, and dice small. Rinse the parsley, shake dry, pluck the leaves and finely chop. Whisk mayonnaise with yogurt and curry until smooth. Season with salt, lemon juice, and pepper.

Remove the chicken breast fillets from the broth, drain on paper towels, and cut into small pieces or shred. Toss with the dressing, lettuce, cucumber, parsley, and additional dressing.

Spread a thick layer of salad on two slices of Tramezzino bread and top each with another slice. Cut once across to halve, then serve the four sandwiches split diagonally.
