Chicken Pasta
Protein-rich pasta dish with chicken, Parmesan and mushrooms – easy to prepare and full of flavor.
Ingredients
- 400 g pasta (e.g., spiral pasta)
- Salt
- 400 g skinless pre-cooked chicken breast fillets
- 300 g mixed mushrooms (e.g., shiitake or button)
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- 100 ml poultry broth
- 2 tbsp heavy cream
- black pepper (ground)
- 40 g freshly grated Parmesan
- 2 tbsp parsley

Cook pasta in a pot of boiling salted water according to package instructions until al dente. Drain well and set aside. Wash chicken, pat dry, and cut into bite-sized pieces. Clean mushrooms and chop them small. Peel shallot and garlic and finely mince.

Heat oil in a hot skillet and brown the chicken over medium heat all sides. Remove and set aside. Sauté shallot and garlic until translucent, then add mushrooms and cook while stirring occasionally until liquid has evaporated completely.

Return chicken to the skillet, pour in broth and cream, season with salt and pepper, and simmer on medium heat for about 5 minutes.

Wash parsley, shake dry, pick leaves and finely chop. Add pasta to the skillet, mix with half of the Parmesan, and serve on pre-warmed plates. Sprinkle remaining Parmesan and chopped parsley over the dish before serving.
