- 200 g Flour
- Salt
- 2 Eggs
- 350 ml milk
- a splash mineral water
- butter (for frying and brushing)
- 750 g cold chicken
- 4 tbsp crème fraîche
- 1 tbsp Lemon Juice
- pepper (ground)
- chives (optional)
Instructions

For the crêpes, whisk the flour with a pinch of salt, the egg, milk, and mineral water into a smooth batter and let it rest for about 20 minutes.

Cook 8-12 crêpes in slightly hot butter one at a time.

Preheat the oven to 180°C fan.

Trim the chicken as desired, shred it into a bowl, mix with crème fraîche, lemon juice, salt, and pepper. Spoon some filling onto the center of each crêpe, roll them into small parcels, place on parchment-lined baking sheet, brush lightly with butter, bake for 4-5 minutes until warmed, then garnish with chives if desired.
