Ingredients

  • 1000 g chicken thighs (4 pieces)
  • 3 tbsp olive oil
  • 1 onion
  • 2 Garlic cloves
  • 800 g canned diced tomatoes
  • Salt
  • Pepper
  • nutmeg
  • 125 g mozzarella cheese (9% fat; 1 ball)
  • 10 sage leaves
  • 40 g Parma ham (4 slices)

Instructions

    Rinse chicken thighs under cold water and pat dry. Heat 1 tbsp oil in a pan over high heat, brown the chicken for 3–4 minutes, then drain on paper towels.

    Peel and finely chop onion and garlic. Add remaining oil to the pan, sauté onions and garlic over medium heat for 2–3 minutes. Add tomatoes, cover, and simmer on low heat for 10 minutes.

    Meanwhile slice mozzarella. Wash and shake sage leaves dry. Season tomato sauce with salt, pepper, and freshly grated nutmeg, pour into a baking dish, arrange chicken thighs on top. Top each thigh with one slice of Parma ham, 2–3 sage leaves, and mozzarella slices. Bake in preheated oven at 200 °C (180 °C fan) for about 40 minutes.
