Ingredients

  • 0.25 tsp fennel seeds
  • 300 g salmon fillet
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Olive Oil
  • 3 tbsp butter
  • 1 bunch chives
  • 200 g filo dough

Instructions

    Crush the fennel seeds in a mortar. Cut the fish fillet into 24 equal cubes and season with fennel, salt, and pepper.

    Heat the oil and 1 tbsp of butter in a pan. Sauté the fish cubes in batches for a short time on all sides, then remove immediately and let cool.

    Place chives in boiling water, bring to a boil briefly, then remove, shock in cold water, and pat dry.

    Preheat the oven to 200 °C and line a baking sheet with parchment paper. Melt the remaining butter.

    Cut the filo dough into 24 squares and brush each square with melted butter.

    Place one fish cube in the center of each square. Fold the pastry over the fish piece and secure with a strip of blanched chive.

    Arrange on the prepared baking sheet and bake in the preheated oven at 200 °C for 30 minutes. Serve hot or cold.
