Chicken Fruit Stir‑Fry

Ingredients

  • 4 chicken breast fillets
  • 3 tbsp Flour
  • Salt
  • black pepper (freshly ground)
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • 50 g roasted, chopped almonds
  • 1 garlic clove (pressed)
  • 1 shallot (finely chopped)
  • 150 ml chicken broth
  • 50 g dried apricots

Instructions

    Cut the chicken breasts into about 5 cm pieces. Mix flour, salt, pepper and oregano; coat the chicken pieces in the mixture.

    Heat a pan with a little oil and brown the meat on both sides for about 5 minutes. Add the shallot and garlic and cook for another 2–3 minutes. Pour in the chicken broth and apricots, bring to a boil, then simmer gently for about 20 minutes. Finally stir in the roasted almonds.

    Serve with broccoli and green beans.
