Ingredients

  • 1 kg mostly waxy potatoes
  • 1 onion
  • 1 tbsp Sunflower oil
  • 300 ml meat broth
  • 1 bay leaf
  • Salt
  • ground cumin
  • freshly ground pepper
  • 2 pickled cucumbers
  • 50 g sour cream
  • 2 tbsp chives sprigs
  • 2 tbsp white wine vinegar
  • a pinch of sugar

Instructions

    Peel, wash and cut the potatoes into bite‑size pieces. Peel the onion and finely dice it. Sauté in hot oil until translucent. Deglaze with broth. Add the bay leaf and potatoes. Season with salt, cumin and pepper. Simmer gently, partially covered for about 20 minutes.

    Meanwhile dice the pickles. Remove the potatoes from heat, add the pickles, sour cream and chives to the pot and season with vinegar and sugar before serving.
