Ingredients

  • 1 kg starchy boiling potatoes
  • 150 g flour
  • 1 egg
  • 1 yolk
  • Salt
  • nutmeg
  • 100 g clarified butter

Instructions

    Wash the potatoes and boil in plenty of water for 25-30 minutes. Drain, peel and press hot through a potato masher. Knead with flour, egg, yolk, salt and nutmeg, then let the dough rest briefly.

    Shape the potato dough into finger‑shaped pieces about 7 cm long using wet hands. Boil in plenty of salted water for 4-5 minutes until cooked. Remove with a slotted spoon, shock in cold water and drain.
