Ingredients

  • 4 chicken breast fillets (ready to cook, skinless)
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp plant oil
  • 16 slices pancetta
  • 8 rosemary sprigs
  • 1 ciabatta loaf
  • olive oil (for drizzling)

    Preheat the oven to 200°C fan and top heat. Wash the chicken breasts, pat dry, cut lengthwise in half, season with salt and pepper, then sear in a hot pan with oil until golden brown on all sides. Remove, wrap each fillet with bacon and place one rosemary sprig on top.

    Bake in the preheated oven for 10-15 minutes. Slice the ciabatta at an angle, place on parchment paper-lined tray, roast until crisp. Drizzle the ciabatta slices with olive oil and serve topped with the chicken breasts.
