Ingredients
- 4 chicken breast fillets
- 2 sprigs fresh lemon balm
- 4 Tbsp lime juice
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp turmeric powder
- 125 ml instant chicken broth
- 3 tbsp olive oil
- 0.5 tsp starch
- Salt
- ground pepper
- lemon balm (and lime wedges)
Instructions

Pat the chicken breast fillets dry with kitchen paper and cut into 2 cm cubes.

Wash the lemon balm, shake off excess water, and finely chop. Mix lime juice with mint, spices, and chicken broth; pour over the chicken cubes, stir, and marinate in the refrigerator for about 5 hours.

Remove the meat cubes from the marinade and drain. Heat oil in a pan and sear the meat cubes for 4-5 minutes over medium heat. Pour in the remaining marinade and bring to a boil.

Whisk starch with 1 tbsp water, stir into the sauce, and simmer until thickened.

Season with salt and pepper. Garnish with lemon balm and lime wedges. Serve with rice.
