Ingredients

  • 4 chicken breast fillets
  • 3 lemons (juice)
  • 400 g fusilli
  • 12 dried tomatoes
  • 3 tbsp black olives
  • 3 tbsp blanched almond kernels
  • 3 Garlic cloves
  • 2 tbsp chopped parsley
  • olive oil (cold‑pressed)
  • Salt
  • black pepper (freshly ground)

Instructions

    Wash and pat dry the chicken breast fillets. Drizzle with lemon juice from 2 lemons and 2 tbsp olive oil, then season with salt and pepper. Mix well and cover; refrigerate overnight in a cool place.

    Quarter the dried tomatoes. Peel the garlic and combine with almonds, parsley, and 3 tbsp oil in a food processor. Season with salt and pepper. Cook the fusilli in plenty of boiling salted water until al dente, then drain. Toss the pasta with the almond pesto and let it cool. Before serving, adjust seasoning with lemon juice and mix in the dried tomatoes and olives.
