Chicken breast with vegetables on matzo bread

Ingredients

  • 80 g green beans
  • 1 ready-made matzo bread (from a Jewish delicatessen)
  • 1 tbsp pine nuts (roasted)
  • 1 handful young spinach (washed and dried)
  • 150 g fried chicken breast fillet (cut into strips)
  • 4 walnut kernels (chopped)
  • 2 tbsp yogurt
  • 2 mint leaves (chopped)
  • cold-pressed olive oil
  • Salt
  • pepper (ground)

Instructions

    Wash, trim, and blanch the beans in boiling salted water for 10–15 minutes. Drain and cut into small pieces. Roast the matzo bread at 220 °C until crisp.

    Place the matzo on a plate and top with spinach, beans, chicken strips, pine nuts, and walnuts. Mix yogurt with mint, 2 tsp olive oil, salt, and pepper, then drizzle over the assembled matzo.
