Ingredients

  • 150 g Carrots
  • 1 red bell pepper
  • 150 g broccoli
  • 150 g zucchini
  • 150 g green beans
  • 1 Garlic clove
  • 450 g mixed ground meat
  • 1 tsp medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 1 Shallot
  • 800 ml vegetable broth
  • 200 g ditalini pasta
  • 200 g diced tomatoes (canned)
  • fresh grated Parmesan (as needed)

Instructions

    Wash, trim, and cut the vegetables into bite-sized pieces.

    Peel and finely chop the garlic for the meatballs. Mix with ground meat, mustard, salt, and pepper; form small balls. Brown them in a hot pan with 2 tbsp oil, then set aside.

    Finely chop the shallot and sauté with the vegetables in a pot using 2 tbsp oil. Add broth, tomatoes, season, add pasta, and simmer on medium heat for 10 minutes. Add meatballs, cook another 5 minutes, taste, and serve in bowls. Sprinkle Parmesan as desired.
