Ground Meat Koftas with Spinach

Ingredients
- 600 g lamb ground meat
- 10 g ginger
- 2 tsp curry
- 1 onion
- 2 tbsp Vegetable oil
- 1 egg yolk
- Salt
- Pepper (freshly ground)
- 4 tbsp Vegetable oil
- juice of one lime
- 2 tbsp chopped parsley
- 12 wooden skewers (or long thin cinnamon sticks)
- 250 g young spinach leaves
- 1 Pomegranate
- 100 g yogurt
- 3 tbsp olive oil
- ground cumin
Instructions

Soak wooden skewers for about 30 minutes.

Clean the spinach, remove thick stems. Wash and dry the leaves.

Halve the pomegranate. Scrape out the seeds with a small spoon, catching the juice that squirts out (be careful!).

Mix pomegranate seeds and juice with yogurt and olive oil; season with salt, pepper, and a pinch of cumin.

Peel and finely chop ginger. Peel and finely chop onion; sauté in oil. Combine ground meat with onions, ginger, curry, egg yolk, parsley, salt, and pepper. Shape into small elongated lumps and thread onto skewers (or wrap around them), brush with oil, and grill slowly until cooked through.

Toss the spinach with the salad dressing.

Serve by drizzling lime juice over the meat skewers and offering the spinach salad on the side.
